5 Fresh Beets 2'diameter2-3 cloves garlic (skin removed)1 TBSP Extra Virgin Olive OilKosher or coarse sea salt (to taste)
Cut Beets into wedges (about 6-8 per beet). Place beets in baggie, add olive oil and shake to coat the beets. Place beets and garlic in baking dish, Lightly salt with Kosher or coarse sea salt, cover and bake at 350 for 1 to 1.5 hours (until beets are tender). No need to peel the beets prior to cooking, they will be easier to peel after - and you will avoid staining your hands. I prefer to eat them with their peels. You can serve these warm with dinner, refrigerate the leftovers and slice them over salad the next day.
