Sweet Strawberry Muffins

Ingredients
2 cups frozen unsweetened strawberries, thawed1 egg, fresh medium1/2 cup milk1 1/2 cups flour1 1/2 tsp baking powder1/2 tsp salt1/2 tsp baking soda1/2 cup granulated sugar
Directions
Mash thawed strawberries with a fork to get a chunky pulp. Add all remaining ingredients and mix well. Batter will be lumpy. Pour into greased or lined muffin tins and bake at 400 degrees for 15-20 minutes.

Makes approximately 18 regular size muffins.

    Very nice. Okay, I added about 2 T. oil so they'd last longer and maybe have a better texture - I've never made muffins without either oil or applesauce, but other than that, used the receipt as is and we've had them for breakfast all week. Thanks - yummy! - 6/24/10
