Natalie's just like take-out Fried Rice

2 tbsp coconut or peanut oil (coconut for this calculation)2 eggs1 cup cooked, diced meat (tukey tenderloin in this case)1 cup diced red pepper1 cup diced sweet onion1 cup frozen sweet peas, thawed3-4 cups cooked rice (I used 4 servings of Minute brown rice, which is a little less than 4 cups)1/4 cup soy sauce (I use lite)1 tsp chili garlic sauce 4 green onions, sliced1 tsp sesame oil
In large skillet or wok, heat 1 tbsp oil at med-high for 2 minutes. Add eggs and cook one minute on each side. Remove and chop, set aside.
Heat remaining oil in skillet or wok, add meat, onion, and pepper. Stir-fry for 5 minutes.
Add peas, rice, soy sauce, and chili garlic sauce. Stir-fry 3-4 minutes, or until heated through.
Stir in egg and top with green onion. Sprinkle with just a little sesame oil for authentic flavor.
serving= 1 cup each. This recipe made just under 7 cups.
