Tuna Mornay Pasta Bake

Ingredients
60g butter1 onion, diced2 carrots diced2 sticks celery, diced1 red capsicum, diced1/3 cup plain flour440g corn kernels or 200g brown mushrooms425g tuna in springwater2x375ml light evaporated milk1 cup grated cheese1 tbs wholegrain mustard2 tbs fresh parsleySalt & pepper500g pasta1 cup breadcrumbsGrated cheese for topping
Directions
Method
1. Melt butter in large saucepan, add onion, carrot, celery & capsicum & cook gently until softened.
2. Add flour and cook for 1 minute.
3. Remove from heat and gradually stir in evaporated milk.
4. Return to heat & stir until thickened.
5. Add tuna, corn, cheese, parsley & mustard.
6. Season with salt & pepper.
7. Cook until heated through and cheese has melted.
8. Stir pasta through. Pour into baking dish. Top with breadcrumbs & cheese. Bake until golden brown.
