Fried Rice

Ingredients
2 cups brown rice10 baby carrots chopped1/2 cup frozen peas2 tbl olive oil2 large eggs2 tbl soy sauce
Directions
In a saucepan, combine rice and water. Bring to a boil. Simmer intil done.
In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
Heat wok or large skillet over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Add in soy sauce and mix. We added some Thai food seasoning that we got from our favorite Thai restuarant for some kick.
