Quick and Easy Eggs Benedict

* 2 eggs* 1 Whole Wheat English Muffin* Butter/Spread * 2 Slices of Cheese* 2 Medium Slices of Tomato
Fry the eggs over easy in a pan using a non-stick spray to grease the pan with. Be sure not to fry the eggs as one cause they are each going to go on a side of the english muffin. While the eggs are on the stove, toast the english muffin and lightly butter (the crisper the muffin the better). Place one tomato slice on each side of the muffin. Microwave for 20 seconds. Place an over easy egg on top of each tomato, breaking the yolk on the underside so it pours onto the tomato and muffin. To melt cheese, place on greased spatula and hover over the hot frying pan until it starts to droop. Place melted cheese on top of the egg. One side of the muffin = 1 serving.
