Fattoush- Vegeterian Salad

Ingredients
- 3 WHOLE WHEAT PITA BREAD ROUNDS CUT INTO 1.5 INCH PIECES.-5 Tablespoons of extra virgin olive oil.-2 garlic cloves pressed.- 3 medium tomatoes chopped.- 1/4 head Romaine Lettuce ( 6 cups ) chopped into bite size pieces.- 1/2 cup of chopped fresh parsley.- 1/2 cup of fresh mint leaves chopped.- 3 medium green onions ( scallions)chopped.- 1 green Bell Pepper chopped.- 1/3 cup freshly squeezed Lemon Juice .
Directions
1. Preheat oven to 375- Brush bread with 2 TBSP OIL
2. Rub with 1 pressed garlic clove
3. Cut into 1 1/2 inch pieces & arrange on heavy Large Baking Pan/sheet.
4. Bake until Golden Brown. ( app. 12 minutes ) stirring occasionally.
5. Transfer baking sheet to rack and Cool.
6. Mix all remaining ingredients in a large mixing bowl. Whisk Lemon Juice and garlic clove in small bowl to blend ( remember to press the garlic clove )
7. Gradually wisk in 1/3 cup of olive oil and add the Pita Chips.
8. Pour over Salad and Toss thoroughly to coat evenly.
9. Optional. Season with Salt and Pepper.
This will make a total of 6 servings for around 224 calories per serving. ENJOY THIS ITS YUMMY !
