PJs Breakfast Veggie Sausage and Spinch Scramble

Ingredients
Morningstar Veggie Sausage Patty - 12 Egg Whites1 Egg Yolk1/2 Cup of spinach (frozen, defrosted, drained)Sriracha hot sauceMission Whole Wheat Tortilla
Directions
Scramble 2 egg whites and one egg yolk. Add defrosted or fresh (or leftover) spinach to non stick pan sprayed with fat free Pam. Sautee for 1 minute. Cook Veggie Sausage Patty for 40 seconds in microwave and then break into small pieces over spinach. Add eggs and cook stirring slowly over medium heat. Place tortilla directly over flame for 3 seconds on each side until brown. Fill with scrambled eggs, drizzle Sriracha hot sauce over the top and roll it all together - YUM! Just over 300 calories. Makes 1 serving
