Healthier Carrot Cake

Ingredients
2 c. grated carrots6 egg whites1 medium banana1 c. skim milk1 c. Unsweetened applesauce3/4 c. brown sugar, packed1 1/2 tsp. vanilla1 tsp nutmeg2 T. cinnamon2 tsp. baking soda2 1/2 tsp baking powder3 c. whole wheat flour1/2 c. raisins, optional (caloric info is w/o raisins)
Directions
Beat eggs, vanilla, and sugar. Stir in applesauce, milk, mashed banana. Mix dry ingredients and add to egg mixture. Stir in carrots and raisins last. Pour into greased 9 x 13 pan. Bake at 350 degrees for 25 mins.

    Very Good but had to bake it longer. 25 minutes wasn't long enough. The toothpick test did not work. It came out clean but after the cake had cooled the middle was still raw. Had to put it back in the oven. - 2/5/11

    There is 1 c. skim milk. My apologies, again. I think it's stupid how you enter all of the ingredient info to calculate calories, but it doesn't transfer over to the ingredient list. What a pain!
