Strawberry Yogurt & Cream Brownies

Boxed brownie mix (19.3 oz; the kind used to make 13x9)4 oz applesauce (used as replacement for oil in brownie mix)2 eggs1/4 cup of water (or as indicated by brownie box)8 oz Cool Whip Lite12 oz Light Yoplait Strawbery yogurthalf a quart of fresh strawberriessmall chocolate bar to shave for garnish (if desired)
Mix brownie mix using the water and 2 eggs indicated on the box, but replace the oil with an equal amount of applesauce. Add 1 heaping tablespoon brownie batter to each cupcake liner. I baked these about 13 minutes at 350 degrees. Allow brownies to cool. Fold 12 oz light yogurt into one 8oz tub of cool whip light. Add 1 heaping tablespoon of the yogurt/cool whip to each cooled brownie. Top with diced strawberries and use a microplaner to sprinkle a touch of chocolate from a chocolate bar on top.

This was fantastic! Absolutely delicious! I had unfrosted store bought brownies in the freezer and I broke up one brownie into two desert dishes, added the yogurt/miracle whip topping and strawberries. Skipped the chocolate shavings. I would definitely serve this to guests it was so good! - 6/25/10

Can this be done ahead or would the cool whip/yogurt make the brownie soggy? Sounds like it will make a great dessert! - 6/28/10

Yes you can make it ahead although you may want to wait until just before serving before adding the fresh cut berries. The yogurt & cool whip set up nicely and don't seep into the Brownie. I'm thinking of making a layer cake with the same filling as it's so much lower in Cal's than frosting. Enjoy!
