Artichoke, Tomato, Parmesan & Green Garlic Frittata

Ingredients
1 cup artichoke hearts, in water1 medium tomato, chopped1/4 cup chopped green garlic or 1 clove finely chopped4 eggs, beaten1/4 cup shredded Parmesan cheesesalt & pepper, to tastecooking spray
Directions
Spray an oven safe pan with cooking spray & heat over medium-high heat. Add artichoke hearts and garlic and saute until tender, add tomato and cook an additional minute.

Preheat broiler.

Reduce heat to medium. Evenly distribute veggies in pan and pour eggs over them. Season with salt & pepper if desired. Sprinkle with cheese. Cook until eggs are set on the bottom, about 2-3 minutes.

Transfer pan to broiler and broil until eggs are set, about 2-3 minutes or until golden brown.
