Chicken Schnitzel

Ingredients
4 Skinless Chicken Breast or 4 Boneless Pork Chops¼ tsp Salt½ tsp Pepper2Tbs Flour2Tbs Mustard1 Large Egg. Beaten½ cup Bread Crumbs1 ½ Tbs Parmesan Cheese2 tsp Italian Seasoning1 clove Garlic, minced1 Tbs Oil
Directions
Preheat oven to 350°. Pound chicken breast to ½ inch thickness. Sprinkle with salt and pepper.

Place flour in a shallow bowl. In a separate bowl, combine mustard and egg. Combine breadcrumbs, cheese, Italian seasoning, and garlic.

Dredge chicken in flour, then egg mix, then breadcrumb mix.

Heat oil in a skillet over medium high heat. Add chicken and saute for 2 ½ minutes per side or until chicken is browned. Remove from heat and place in a baking dish and bake for 10 minutes.
