Salmon curry

Ingredients
the fish-4 fillets of atlantic salmonfish masala-a tsp each of clove powder,cardamom,cinnamon powder,fenugreek seeds or ground fenugreekchilli powdercoriander powder andcumin powderTamarindcurry leavesginger root-1 in.garlic crushedonin-1 cup coppedturmeric powder-a pinch,salt to taste,crushed tomatoes
Directions
First clean the fillets and cut into 1x1squares and rub with the masala and turmeric and a little salt.
then in a large skillet-I like cast iron-heat some olive oil-1 tbsp.Pop the mustatrd seeds and add the curry leaves.Add the ginger,garlic and onion till the onion becomes translucent.Then add the fish with the masala,tamrind and tomatoes.
variations-Can add coconut milk-1/2 cup at the end or cooking sherry.cook till fish flakes easily.Bon Appetit!
