Pineapple-Banana Bran Muffins

Ingredients
Dry ingredients:1/3 cup ground flax1 1/3 cups wheat bran1 cup whole wheat flour1/3 cup Splenda2 T cinnamon1.5 tsp baking soda1.5 tsp baking powderWet ingredients:14 oz. can crushed pineapple (in own juice, use juice too)1 egg1 lg banana, mashed2 T olive oil1/3 cup fat-free yogurt (greek style)1 tsp rum or vanilla extract
Directions
makes 12 muffins

In mixing bowl combine all the dry ingredients, blend well.

In smaller bowl, combine all the wet ingredients, blend well.

Add wet ingredients to dry ingredients; stir just until combined.

Spoon batter into non-stick muffin tins (can spray w/ cooking spray to reduce sticking). Bakin in a 400F oven for 25 minutes or until firm to the touch.
