Linguini with Anchovy & Garlic sauce

1 tbsp Olive Oil1 tbsp Butter, salted2 Anchovies12 Grape Tomatoes, halved2 cups Fresh Baby Spinach, fresh1/2 cup Chicken Broth4 oz Healthy Harvest Linguini2 cloves Garlic, minced1 Small Shallot, finely diced (about 1 tbsp)
Cook pasta in large pot of boiling water (salted or not, as you prefer).
Meanwhile, in a large saute pan, cook anchovies in garlic and butter until they pretty much disintegrate into a paste. Add shallots and cook for a minute or two until soft. Turn down heat and add garlic; cook until fragrant and add tomatoes and spinach. Cook just until spinach begins to wilt. Add chicken broth and remove from heat.
Drain pasta, reserving a cup of pasta water.
Turn up heat under broth mixture till it just barely comes to a boil; remove from heat and add hot, drained pasta. Toss to mix. Add a little pasta water if you prefer your pasta wetter.
Serves 2.
