Cheesecake Pancakes

Ingredients
2 large eggs4 oz Cream CheeseSweetzfree (to taste) or Splenda .5 tsp Cinnamon, ground1 tbsp Flax Seed Meal (ground flax)
Directions
Place the egg whites in a separate bowl and beat with electric mixer until stiff peaks appear.
Place the cream cheese in a large bowl and beat with the mixer until smooth. Beat in the egg yolks and the the sweetner, cinnamon, salt and flaxseed meal. Fold in the egg whites.
Heat large heavy fry pan over meduim low heat. Grease lightly with butter. Form pancakes using about 1/4 cup of the batter for each pancake. Cook until golden brown, about 2-3 minutes each side. Don't rush these- if you cook them on too high of a tempature, the butter will burn.

Can be served with Butter, Fruit, Whipped Cream...whatever you like. They're great plain!!!

    Am I missing something?? There is no measurement to go by with regards to the amount of Splenda or salt!! So I put 1/2 tsp of salt and a Tbls Splenda.This recipe yielded 4( NOT 10) little salty,nasty "pancakes" and a lot of dishes. How were the rest of you ending up with something tasty? - 9/1/12

    I've made something very similar to this. EVERYONE in my family diabetic or non, did LOVE these.
    8oz cream cheese
    2 Tbl spoons butter
    4 Lg eggs
    2 Tbsp Almond Meal
    1/4 tsp salt
    1tsp cinnamon
    4 packets of Splenda or something comparable (more if you like sweeter)
    1-1-1/2 tsp Vanilla Extract - 8/25/13

    These were incredible. Didn't have eggs, just egg beaters and ended up putting everything in one bowl and beating. 4 splenda was perfect. I did use 3 more tbsp of flax meal. ****But adding up the carbs myself, it came to 4.8 total carbs. 4 oz cream cheese = 4 carb, 2 eggs =.8. Track Accurate. - 5/11/13

    I added about a half a cup of ground almonds instead of ground flax (didn't have any) & I added a bit of baking powder & vanilla. I made many small pancakes so they were easier to flip. The almonds gave them more texture. I used Pam for frying, added blueberries and served with applesauce. Good! - 2/12/13

    These are a Godsend and definitely cured my IHOP jones, but I think I did something wrong. Mine took a really long time to cook (maybe three times the stated time) and flattened out to almost crepe-like. Not that there's really anything wrong with that- I love crepes! - 3/28/12
