150g margarine (I can't believe it's not butter)75g xylitol1 tsp vanillawater to moisten190g flour20g egg replacer70g desiccated coconut1/2 tbs reduced sugar jam
Preheat oven to 190˚C.
Cream the margarine and xylitol, add vanilla essence.
Sift in flour and egg replacer, stir in desiccated coconut.
At this stage check if the dough is pliable enough to roll, add water if necessary (up to 50ml)
Scoop up tablespoonsful of dough and roll into balls, flatten slightly if the dough is firm, make shallow depressions in each biscuit and fill with jam.
Bake for 15 minutes until golden.
