Sweet and sour Veggie stir-fry

Ingredients
1 Med eggplant cubed2 med/small yellow squash chopped1 med sweet onion sliced1 head of broccoli chopped1 large red pepper sliced2 cloves garlic10 oz jar of sweet and sour sauce (la choy)Brown Rice
Directions
Prep all your veggies by cleaning and choppin them. (this dish cooks up quickly in a wok, or large pan) Over med/hi heat put 2 Tbsp olive oil and add onion and red pepper, saute for a few minutes then add other veggies and garlic. Saute while stirring rapidly till all the veggies are tender, add the jar of sweet and sour sauce and mix well. Serve over brown rice.
