Dozer's Breakfast burritos

2 links Honeysuckle White turkey breakfast sausage4 TBSP of Egg Beaters egg substitute2 TBSP Pace Picante Sauce2 TBSP low fat sour cream2 TBSP. low fat cheddar cheese2 Whole wheat tortilla shell (8 inch)
Fairly simple recipe. Fry sausage links in pan and set aside, add egg beaters to same pan and scramble eggs to desired consistency and remove from heat.
Place tortillas on microwave safe plate and cover with damp paper towel. Microwave for around 15-30 seconds depending on microwave to make tortillas warm and more pliable.
Remove paper towel and lay tortillas flat on plate. Smear 1 TBSP of sour cream on center of each tortilla. Spread 1 TBSP each of picante sauce on top of sour cream. Chop up eggs and sausage and place on top of tortillas. Sprinkle 1 oz. of cheese over top each and wrap tortilla like a mini burrito.
I personally like to put some Louisiana hot sauce on mine but that is a personal preference. I make these for my wife and I to take to work for breakfast, to keep the burritos 'wrapped' in their tupperware container I slide a toothpick in the side of each one like a safety pin and it works great.
