Make Ahead Burritos

Ingredients
2 Cups Brown Rice (uncooked)4 Cans Kidney Beans (15.5 oz.)2 Cans Pinto Beans (15.5 oz.)1 Can Mexic-Corn (11 oz.)1 Can Diced Tomatoes (15.5 oz.)1 Cup Cheddar Cheese, Shredded1 Cup Monterey Cheese, Shredded
Directions
1) Add Brown Rice to 4 Cups of water and allow to boil. Reduce heat to medium low and simmer for 35-40 minutes.

2) The last 5 minutes of the rice cooking...combine the beans, corn, and tomatoes in a large skillet on medium. Combine rice and stir thoroughly.

3) Assembly the burrito-add cheese and freeze or serve immediately.
