Vegetarian Dirty Rice

Ingredients
1 tsp canola oil1 large onion, chopped2 celery stalks, chopped1 green bell pepper, stems and seeds removed, chopped1 red bell pepper, stems and seeds removed, chopped4 garlic cloves, minced1 bunch green onions, chopped10 oz sausage style vegetable protein (usually found near the tofu in your grocery store)3 cups cooked brown rice1/4 cup vegetable broth1 tsp chili powder1/4 tsp cayenne pepper1 tsp paprika1 tsp salt1/2 tsp black pepper1/4 cup fresh chopped parsley
Directions
1. Heat oil in large cast iron or non-stick skillet over medium-high heat. Add onion. celery, and bell peppers and saute until onion is translucent. Add garlic, green onions, and spices and cook for one minute more, or until garlic is fragrant.
2. Add vegetable protein and stir, breaking up with spoon. Cook for a few minutes or until browned. (*If it anything begins to burn or stick to the bottom of the pan, just add some water or broth and continue cooking)
3. Add cooked rice and vegetable stock. Stir and cook until most of liquid is gone and rice is heated through. Stir in chopped parsley and serve.
