spinach egg quiche

Ingredients
10 thawed spinach3 cloves chopped garlic1 cup chopped yellow or red bell pepper1 cup chopped white or yello onion4 egg whites, 1 whole egg beaten1 cup shredded cheese, your choice5 slices healthy style canadian bacon (Trader Joes)salt and pepper to taste
Directions
mix all ingredients, pour into 12 foil cupcake liners, cook at 350 for 20 minutes or until egg no longer jiggly. Good warm or cold. great for on the run breakfast 2 muffins=1 serving. Get creative with veggies added
