Sausage and Peppers

Ingredients
1 Tbsp extra virgin olive oil1 lb. turkey smoked sausage, sliced1 green pepper, sliced1 red pepper, sliced1 small onion, sliced1 Tbsp Cajun seasoning1 1/2 cups cooked white rice, optional
Directions
Heat oil in skillet over medium to medium-high heat. Add sausage and Cajun seasoning, stirring frequently until sausage is slightly browned. Add peppers and onion and cook, stirring often, until vegetables are crisp-tender. Serve over rice if desired.
