Clevelander's Chicken Cacciatore

1 tbl. olive oilsalt, pepper4 boneless, skinless chicken breast halves2 cloves garlic, minced1 green bell pepper, sliced1 red or yellow bell pepper, sliced1 large sweet onion, sliced1/2 cup red wine (optional)1 jar or can(15. oz.) pizza sauce1 tbl. red pepper flakes (optional)
Season the chicken breasts with salt and pepper. Add the olive oil to a hot, non-stick dutch oven or deep skillet. Brown the chicken breasts on both sides in the olive oil.
Add the garlic, sliced peppers, sliced onion, wine and pizza sauce on top of the chicken.
Cover the pan, reduce heat to medium, and simmer for 15 - 20 minutes, depending on the size of the chicken breasts. (Internal temperature of cooked chicken should be 170 degrees)
Stir in red pepper flakes and serve.
If desired, serve with whole wheat pasta and a sprinkle of grated parmesean cheese.
