Captain Hap's "You gotta be kidding" Carrots

Baby Carrots, raw, 450 grams (1 pound )Red Wine Vinegar, 1tbspPom Wonderful Pomegranate Juice, 1oz
Baby Carrots, raw, 450 grams (1 pound )
Red Wine Vinegar, 1tbsp
Pom Wonderful Pomegranate Juice, 1oz
Place carrots in large frying pan.
Add about a 1/4 cup of water.
Cover and bring up to boiling.
Reduce heat and let the carrots steam for about 5 minutes.
Drain off any remaining water.
Add the pomegranate juice and vinegar.
Bring the heat back up to simmer.
Reduce (simmer away) the liquid to almost gone, stirring often.
Plate them up. You'll be amazed.

I don't care for carrots much, but I thought this recipe made them enjoyable. Please add amounts to the ingredients. - 6/21/10
