Quinoa, Black Bean, Pico and Guac

Ingredients
1/2 cup quinoa1 cup veg stock or water1 cup black beansprepared pico del gallo (however much you want) or just chopped tomato, onion, cilantro and jalapeno1/4 cup prepared guacamole (I use AvoClassic original)lime juice to taste approx 2 tbs
Directions
Rinse and drain quinoa in a sieve. Cook with broth or water as you would rice, 15-20 minutes. Fluff w/ a fork, allow to cool. Mix in remaining ingredients. Serves two.
