12 oz salmon divided into 4 3oz filletsolive oil1 can black beans1 can corn1cup chopped onions2 cups romaine lettuce shredded2 tbspn essence seasoning by emeril lagasse or other creole style seasoning
Heat olive oil in nonstick skillet and cook salmon fillets. Fillet is done when salmon is flaky. Combine other ingredients for the salad, and top with one of the salmon fillets. To cut back on calories, season with your favorite seasonings and spritz with lemon juice.
