Pomelo Salad

1/2 pomelo or grapefruit4 shallots, sliced1/2 tsp crushed dried chili2 tbsp brown sugar2 tbsp soy sauceJuice of 2 limes1/4 tsp salt
Holding the fruit over a bowl, remove the membranes and separate and halve the segments.
Discard the skin.
Add all the remaining ingredients to the bowl and mix thoroughly.
Serve the salad at room temperature.

I don't really like grapefruit, but I often crave it!!?? Maybe my body knows that I need something that it offers. But this sounds like the perfect way to have my grapefruit and eat it too! Wonderful...I love grapefruit and pomelo....Asian food needs the sugar and the soy sauce your body metabolizes soy sauce very easily..however I didn't add the extra table salt..just look at how petite most Asians are....that should give you the clue that this is not an unhealthy salad. - 3/3/08
