2 cups Fresh Mulberries1 C. minus 1 Tbsp Hodgson Whole Wheat Graham Flour3/4 C Bob's Red Mill Whole Grain Oat Flour1 1/2 tsp baking powder1/2 tsp Sea Salt1/2 tsp Cinnamon3/4 C. packed brown sugar2 egg whites3/4 C Oikos Fat Free Plain Greek Yogurt1/2 C. + 1 Tbsp Unsweetened Applesauce2 Tbsp. Hodgson Mill Whole Wheat Graham Flour
Preheat oven to 375F.. Grease muffin pan with no stick cooking spray.. combine dry ingredients in bowl #1... Mix Egg Whites, Yogurt, and Applesauce in bowl #2 and combine with bowl #1... In bowl #3 toss mulberries in 2 Tbsp Graham Flour(this will keep the berries from settling at the bottom of the batter).. Fold mulberries into mix. Pour into prepared muffin tin, bake 20-25 minutes.. Yeild: 12 Muffins
