Applesauce oatmeal pancakes

Ingredients
1/2 cup whole wheat flour 1/2 cup quick oats 1/2 cup fat-free milk (or soy milk)1 tsp baking powder1/2 tsp baking soda1/4 tsp salt1/2 cup unsweetened applesauce2 large egg whites1 tbsp canola oil
Directions
Place ingredients in a medium bowl and whisk until well blended.

Heat a griddle to 375 degrees (medium). When griddle is hot, pour about 1/4 cup of pancake batter per pancake. Cook until bubbles appear and edges are puffed

makes about 8 pancakes, 2 pancake servings.

*A tsp of vanilla extract and cinnamon are VERY good to add to this dish! But not necessary based on personal tastes*
**Feel free to add extra goodies to this! if you do a double batch(or more!), add some flax seed meal for added omega's and nutty taste**

    Exchanged the quick cooking oats for longer cooking whole oats. Let the batter sit for about 10-15 minutes to soften the oats and you get more tooth to the pancake and a little more body. Very tasty - added vanilla and a little cinnamon as well.
    Also beat the eggs whites until fluffy and fold in. - 6/24/10

    My husband and I both loved this healthy alternative to pancakes. Since there is no sweetener in the recipe I added a 1/2 tsp of vanilla and a 1/4 tsp of ground cinnamon to give it more flavor. We are definitely adding this to our Sunday brunch repertoire. - 8/30/09
