Ingredients
Frozen Yellow Sweet Corn, 2 cupsSliced Mushrooms, fresh, 10 ozBlack Beans, One Can (drained and rinsed)3 Scallions, ChoppedFresh Cilantro Chopped, 4 tbsp Pre-Cooked Chicken Breast Chopped, 10 ounces Chicken Broth, 1/2 cup Light Sour Cream, 1 tbsp (optional)
Directions
- Place frozen corn and mushrooms in a lightly oil pan and cook until mushrooms are tender
- Pour in chicken broth
- Add in black beans, pre-cooked chicken breast, scallions, and cilantro, stir for 5 minutes.
- Dish and place sour cream on top (optional)
