Rotel Rice and Black Beans - spanish rice

Ingredients
1 can Rotel tomatoes and chiles1 can black beans 3 cups brown rice (cooked)1/2 cup chopped onionAdd to taste: chili powder, cumin, chopped bell pepper, chopped hot pepper, garlic peas, green onion, etc. If preferred, top with cheese or sour cream, but add this separately for nutrition info.
Directions
Cook 3 cups of brown rice according to directions (that's where the hour comes in). Drain black beans. Add beans, tomatoes, additional veggies and onions, plus any preferred spices. Simmer to heat. Serve.

    Love this recipe. Rotel adds a little kick to the dish. I also stir in some diced chicken breast along with the chili powder and cumin. - 3/26/12
