Ingredients
1 tbsp evoo; 1 bell pepper, chopped; 1/2 cup mushroom pieces; 1 cup potatoes, chopped; 1 clove garlic, minced; 1/4 cup onions, chopped; 3 eggs; milk (it says 1/4 cup but whatever you usually use for scrambled eggs); 1 tbsp crushed red pepper; cheddar cheese.
Directions
Heat up EVOO in a cast iron pan over medium low. Add garlic, potatoes, peppers, mushrooms and onions. Stir until potatoes are cooked on all sides. Beat eggs with milk and add to the mix. Stir until eggs are done, then add a sprinkle of cheddar. Once cheese melts, it's done.
