Banana Oat Pancakes

3 small bananas, mashed well2 tbsp unsalted butter, melted1 tablespoon lemon juice1 tbsp sugar2 eggs, large1 cup oat flour.5 tsp baking soda.5 tsp salt.5 tsp nutmeg.5 tsp cinnamon
Mix the mashed banana, butter, lemon juice, and sugar in a bowl. In a separate bowl combine the remaining ingredients.
Add the wet ingredients to the dry ingredients and mix until combined, adding a little water to thin out if needed. Let sit for ten minutes.
Heat a pan over medium-heat, spray with non-stick spray, or use a non-stick pan. Spoon 1/4 cup of batter into the pan to make each pancake and cook until the edges dry, about 3-4 minutes, flip pancake and cook other side for 1-2 minutes or until golden brown. Serve two pancakes per serving, recipe should yield a total of ten pancakes.
