Dill potato salad

Ingredients
2 lbs red new potatoes or fingerling potatoes cut into bite size pieces2 tsp Dijon mustards ( I use Emerils but any will do)2 tbsp Fresh squeezed Lemon Juice2 tbsp Sherry Vinegar1 tbsp chopped shallots ( I add a bit more)2 tbsp Extra Virgin Olive Oil2 tbsp Fresh Dill chopped ( again I add a bit more)Sea Salt to tasteFresh Ground Black pepper to taste
Directions
Steam the bite size potatoes in a steamer basket above about 2 inches boiling water. Cover to steam, they steam much faster. While potatoes are steaming mix all other ingredients. Once potatoes are done let rest for about 5 then mix in with vinaigrette and toss to coat.
