Baked Sweet Potato and Veggie Medley

Ingredients
You will need 1 medium Sweet Potato, 1 cup (or 1/4 of a 2lb bag) or frozen broccoli, 1/2 cup frozen corn, 10 baby carrots or 1/2 cup frozen crinkle carrots and 2 tsp butter or margarine. Salt to taste.
Directions
Leave the skin on the sweet potato (for extra fiber!) and cut it into small cubes. Cut carrots into smaller pieces unless using frozen crinkle carrots (which is what I use) and put in about 1/2 cup. Combine all ingredients together in a pie dish that had been covered in foil for easy clean up and cover the top with foil as well to keep it nice and moist.
Put it in the over at 425 degrees and check on it after about 30 minutes, stir, put back in the over for another 30 minutes or so until all are tender. It can be eaten as a whole meal because it is so filling. That would make about 2 servings. Or you can use it as a side dish and will make about 4 servings.
