Roasted Butternut Squash

Ingredients
1 Butternut Squash (about 4 cups cubed)1 Shallot, finely chopped1 T Fresh Sage, finely chopped/ground1 t Olive Oil1 t salt, or to taste1/4 t ground pepper, or to taste
Directions
Preheat oven to 400 degrees.

Combine all ingredients and spray some fat free butter flavored cooking spray. Place squash in an even layer in a casserole dish or on a cooking sheet and place in the middle rack of the oven for 45 minutes (keep a watch over the squash if using a metal cookie sheet, as the conduction of heat is more intense and the cooking may take a shorter amount of time).

    basically I just used olive oil, salt and pepper and this was delicious! Made the other non healthy brown sugar method (for hubby - as this is what he is used to) and EVERYONE picky eater kids and hubby LOVED this healthy version much better! - 10/5/14

    This is a wonderful seasoning for the squash--so tasty. The sage/shallot prevents the squash from being too sweet--as is common with many cinnamon/nutmeg recipes. - 11/15/10
