Courtney's banana oatmeal breakfast bars

Ingredients
3 cups quick oats1 1/3 cup skim milk2/3 cup brown sugar2 medium bananas2 eggs1 tsp cinnamon2 tsp vanilla extract
Directions
Preheat oven to 350.

Mash banana and stir in eggs, cinnamon, vanilla, and brown sugar. Stir in oats and milk. Pour in 8x8 dish you have sprayed with non-stick spray.

Bake at 350 for about 30minutes. Let cool cool and cut into 9 squares.

    I found this very bland. I ended up topping the squares with a tablespoon of Nutella to give it some flavor. That helped immensely. I don't think I will make them again. I thought it was a waste of bananas. - 8/13/10
