Whole Grain Blueberry Muffins

2 cups whole wheat pastry flour1 cup natural cane sugar or sucanat2 tsp. baking powder1/4 tsp. salt1 cup plain yogurt1/4 cup butter (1/2 stick), melted1/2 cup unsweetened applesauce2 eggs, lightly beaten1 tsp. vanilla1.5 cups fresh blueberries
Preheat an oven to 375 degrees F
Mix the flour, sugar, baking powder, and salt and set aside.
In a separate bowl, whisk together the yogurt, applesauce, butter, vanilla and beaten egg.
Make a well in the dry ingredients and add the wet to them. Fold together quickly. Do not over mix. Fold in the blueberries.
Divide the batter among 15 greased and floured (or lined with paper cups) muffin tins. Bake for 25 minutes or until golden on top.
