Ingredients
Directions
2 slices of whole wheat bread, or 3 slices of thin-sliced bread2 egg whites or egg substitute2 oz (1/2 serving) of plain or flavored yogurt (I used Strawberry Dannon Activia)A dash of cinnamon1 tsp light vegetable oil spread
Heat a griddle on medium to medium low. Melt some vegetable oil spread on it. Meanwhile, in a mixing bowl, combine the egg whites or substitute with the yogurt and cinnamon until well-blended. Put a slice of bread in it and let it soak for approximately 30 seconds to a minute, then turn it around. Once the slice is completely drenched, place on the griddle immediately. Repeat until all slices have batter. Cook on each side for up to three minutes, then serve with your favorite fruit, syrup and/or jelly. This recipe makes a two-slice serving.
