5T ground coffee, preferably Cafe Bustatelo brand, or any dark, espresso-type coffee9T granulated sugar9-10 ounces of water
1. Unscrew the top of your espresso maker, and remove the filter. Add the water into the bottom half. Do not fill the water above the level of the bolt inside your espresso maker.
2. Replace the metal filter into the bottom of the espresso maker, and add the coffee grounds, tamping down firmly, untoil the coffee is level with the top of the filter.
3. Screw the top and bottom of the espresso maker back together.
4. Place the espresso maker onto burner of stove set on high heat.
5. Meanwhile, place sugar into bottom of a metal cup, about 1 teaspoon per 2oz of water.
6. When coffee begins to percolate, add enough coffee into metal cup to moisten sugar, stir vigorously to form a paste. Return espresso maker to stove.
7. Remove espresso maker from heat when the top portion is about 3/4 full, this will prevent the pot from overflowing, or the coffee from burning.
8. When coffee is finished percolating, add to the metal cup, and stir to finish dissolving sugar.
9. Serve coffe in demitasse cups.
I am a coffee-holic, so this is about 2 servings for me, however, typically about 2-3 ounces is one serving.
