Ingredients
Cauliflower, raw, 1 head, small (4" dia)Summer Squash, 1 cup, slicedGarlic, 2 clovesGarlic powder, 1 tspGarlic Scapes, .25 cupGreen Peppers (bell peppers), .33 cup, stripsOregano, ground, 1 tspBasil, 1 tbspCheddar or Colby Cheese, Low Fat, .25 cup, shreddedPam cooking spray
Directions
1) Toss all ingredients together and roast in 375 degree oven.
Makes 4 1/2 cup servings.
