Mexican Style Shrimp Cocktail

1 pound boiled shrimp, shelled and de-veined1 avocado, diced3 cups pico de gallo (diced tomatoes, onions, cilantro, jalepenos with lime juice)1-3 jalepeño peppers, diced (optional)8 TBSP ketchup1 C beef (shrimp if you have it!) brothjuice of one lime (in addition to the lime juice in the pico de gallo)Celery stalks, with leaves, for garnishadditional hot sauce (such as Valentina or Tobasco) to taste
Assemble your ingredients in a large bowl, add lime juice and stir to blend.
Ladle into 4 large "ice-cream sundae" glasses with a long tea-spoon. Garnish with a celery stalk
Serve with saltine crackers (remember to add the crackers to your calorie count) and add the hot sauce to taste!
Makes 4 2 1/2 cup servings.
