CJ's Spanish Rice

Ingredients
*Spray olive oil (can add regular olive oil but this isn't factored into calorie count-spray has 0 cals/0 fat)*1 large onion, chopped*1 red bell pepper, chopped*1 garlic clove, chopped (I just use 1 T refrigerated minced garlic-saves time)*1 cup uncooked brown rice*1 can diced tomatoes *1-4 oz can diced green chilis *2 cups fat free low sodium chicken broth (1 can)*1 T chili powder (use more or less to taste)
Directions
*Heat deep skillet and spray/coat with olive oil spray
*Saute onion, pepper, and garlic until softened
*Add rice, saute until browned
*Stir in tomatoes, green chilis, and broth
*Season with chili powder
*Cover and simmer on low until rice is cooked and liquid absorbed, stirring occasionally, about 30 minutes
Makes 12 1/2 cup servings
