Gloria's Boiled Red Potatoes

Ingredients
2.5 lbs red potatoes, scrubbed and cut into about 1 inch chunks--leave skin on!2 TBL olive oil2 TBL butter1.5 TBL dried parsley(or triple the amount of fresh)1/2 teaspoon salt1/4 teaspoon black pepper(or to taste)
Directions
Cook potatoes until fork tender in a large pot of water. Drain water. Add oil, butter and parsley and stir. Add salt and pepper and stir again. I am not very gentle with the stirring since it's nice to have some of the potatoes a little smooshed. Makes about 8 1-cup portions.
