1 Large Head of cauliflower2 Tbsp Tahini (Sesame Seed Paste)1-2 lemons, juiced1 clove garlic, mincedSalt to taste
Break Cauliflower into florets and steam. Do not overcook. Once cooled, place in a food processor with the minced garlic, juice of 1 lemon, and the tahini. Process using the pulse button until combined and dip consistency. Do not over process or it will liquify. Adjust the seasoning with more lemon juice if necessary. place on a platter, dust with paprika. Serve with raw veggies or pita chips.

Suggestions I have found online for alternatives to Tahini: " mix one part flax seeds and one part Olive Oil. It's good and you get more fiber OR use olive oil and ground cumin in its place OR cover that lack of authenticity with a tablespoon or two of toasted sesame oil OR sunflower butter" - 1/7/17
