Eggless Chocolate Cake

1-1/2 cup flour1/3 cup cocoa powder1 tsp. baking soda1/2 tsp. salt1 cup sugar1/2 cup vegetable oil1 cup cold water2 tsp. vanilla extract2 tsp. vinegar
Makes 12 (2.75"x3") or 24 (2"x2")
Preheat oven to 375°F.
Spray a small baking pan (8x12) with Butter flavored Pam or veggie spray.
Sift all dry ingredients in one bowl. Mix all the wet ingredients, except vinegar, together in another bowl.
Transfer dry and wet ingredients to the baking pan and stir together till combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 minutes
Optional:
Serve with fruit, berries, chocolate syrup, nuts, etc.
