Number of Servings: 16

Ingredients

    crust:
    1/2 c Country Crock Light Spread
    1/4 cup skim milk
    1 cup whole wheat flour (+ or - 1/2 cup)

    Filling:
    3 cups chopped rhubarb
    1 cup granulated sugar
    1/4 cup cornstarch
    1/4 cup water



Directions

To make crust, knead together margarine, milk and flour in a bowl. Turn out onto floured surface and roll out thin and flat. Drape 1/2 dough in pie pan and use fingers to press into pan. roll out other 1/2 of dough to form top crust.
to make filling, mix all 4 ingredients in a medium saucepan, and heat until boiling, or thickened. Remove from heat and pour into pie shell. gently place top crust on top of filling and seal edges.
Bake at 375 for 45 minutes or until crust is golden brown.

I cut this pie into 16 small slices and top with Cool Whip Free! mmmm yum

    I make a sauce with rhubarb,some water, blackberries, and SF strawberry jello. It is so good. I am going to experiment with adding some tapioca so that I can make a one pie crust pie This will be almost a perfect food for a diabetic. :0) - 6/6/19
