Chicken Ragout with Potatoes & Olives

Ingredients
1 tsp Olive oil1.5 bl boneless skinless chicken thighs extra visible fat removed and cut into small pieces1 tsp salt1 tsp pepper1 onion thinly sliced1 clove garlic chopped2 large baking potatoes peeled and choped into small cubes10 kalamata olives1 can petite diced tomatoes well drained1/2 c chicken broth1/4 c white winefresh basil
Directions
Heat oil in large non stick skillet over med-hi heat. Sprinkle thighs with salt and pepper and add to skillet- saute turning ocasionally 5 minutes. Add onion and garlic continue cooking 5 minutes. Stir in Tomatoes, potatoes, olives broth & wine. Cover and reduce heat to low and cook until potatoes are tender and chicken is fully cooked about 20-25 minutes. Remove from heat and stir in fresh chopped basil to taste.
