Apple and Spice Wheaten Shortbreads

1 cup flour1 cup whole wheat flour2 tbsp ground flaxseed1 tbsp wheat germ1/2 tsp baking powder1 tsp cinnamon1/2 tsp nutmeg1/4 tsp salt4 oz butter, softened3/4 cup dark brown sugar2 tsp vanilla1 apple, peeled and grated
Preheat oven to 350F.
Whisk together flours, flaxseed, wheat germ, baking powder, cinnamon, nutmeg and salt.
In a large bowl, cream butter and brown sugar together until fluffy.
Add vanilla and apple and blend to combine.
Wrap in plastic and refrigerate for 30 minutes.
Gently roll out between layers of plastic or wax paper to a rectangle about 1/2" thick.
Cut into 30 squares and place onto a baking sheet lined with a Silpat or parchment.
Bake for 10-12 minutes. Cool completely on baking sheet.
